So it’s a little embarrassing to admit this, but sometimes I am straight up lazy. I mean the kind of lazy that finds me plopping my butt on the couch and catching up on my DVRed shows while inhaling some kind of unhealthy, yet oh so delicious, snack while the house remains dirty, the laundry unfolded and dinner not started. But before long the kids pop my do nothing bubble by reminding me gently and politely loudly and incessantly that they are hungry. Now it’s quickly closing in on dinner time and I am totally unprepared. Days like this are the perfect time to whip up some quick pizza dough and have a fun family pizza decorating party. And thankfully, this pizza can be ready from start to finish in 30 minutes. Better still is that it has a delicious yeast dough that will make you glad that you didn’t call out for delivery!
- 1 cup warm water
- 2¼ tsp active yeast (or 1 package)
- 1 tsp sugar
- 2½ cups all purpose flour
- 2 Tbs olive oil
- 1 tsp salt
- ¼ tsp garlic powder
- ¼ tsp oregano
- cornmeal
- Preheat oven to 425*
- Dissolve yeast and sugar in warm water in a medium mixing bowl and allow to bloom, letting stand 10 minutes.
- Add flour, olive oil and salt and beat until smooth. Let rest for five minutes.
- On a lightly floured surface, roll out dough to desired thickness and transfer to a pizza stone or cookie sheet prepared with a dusting of cornmeal.
- Add desired toppings and cook for 20 minutes or until golden brown.
We like to set out a multitude of toppings and let everyone make their own pizza. It’s so fun to see what each person chooses. We have had some really successful creative pizzas and some epic failures. I think the absolute worst was using Thousand Island dressing in lieu of pizza sauce. Not so much, but ranch with pepperoni is a huge hit. Fresh mozzarella seems to make a pretty significant difference as well and I’d definitely suggest it. The kids even really enjoy using a small piece of dough to shape and dust with cinnamon and sugar. We bake it and it becomes their dessert.
And after a quick 30 minutes from the time that I hopped up off the couch, dinner is served and everyone is happy because they got the exact pizza that they wanted. Not too shabby for this sometimes lazy momma.
