Buttermilk pancakes are a comfort food in my home. My family loves their fluffy, syrupy sweet deliciousness served up morning, noon or night. It is so quick and simple to whip up a batch that the kids even get into the action and mix it all up for me. And when the kids get in the kitchen, chocolate inevitably becomes involved in the process. Sometimes that is not so great (hot dogs with chocolate chip relish comes to mind – true story), but sometimes it becomes food paradise. Those little hooligans really struck gold when they snuck a big handful of mini chocolate chips into our pancake batter and we’ve been serving ’em up that way ever since.
- 2 cups all purpose flour
- ⅓ cup sugar
- 2 tsp baking powder
- 1 tsp sea salt
- 1 tsp baking soda
- 2 eggs
- 4 tbs melted butter
- 2 cups buttermilk
- Add all ingredients to large bowl and whisk until well incorporated. Use a small measuring cup to drop batter onto warmed griddle (I set mine at 350*). Cook until bubbles form and flip to the other side. Continue cooking until golden brown.
Feel free to experiment with your own additions…I am sure that cinnamon chips would be divine. Or how about peanut butter chips? Yummy!
