Down here in the south, the kids are enjoying a nice long break from school. Not only was it a three day weekend due to President’s Day, but we are now smack in the middle of our second “snow day.” I don’t think I will ever get used to the fear of the ice and the snow, having grown up with it my whole life, but sometimes it is nice when the whole world seems to come to a standstill and gives you a couple of days to enjoy being lazy.
And it was during this lazy lull that my kiddos and I decided to get wild and crazy with our breakfast. You see, having three children often means three people asking for three different meals three times a day and this momma almost always says no. As much as I love diners, I do not want to be a short order cook, let alone in my own home for no paycheck! So when child one asked for muffins, child two asked for pancakes and child three asked for chocolate (yeah, she would totally eat a chocolate bar for breakfast if she thought she could get away with it), I decided to throw it all together and see what happens.
Good things, people. That’s what happens. We could not decide if they should be called pan-muffins, muff-cakes or any other combination of the words pancakes and muffins, but really, who cares because they are freaking delicious!
Because I am obsessed with our favorite buttermilk pancake recipe, I chose to not alter the recipe at all (but thankfully my photography has improved a bit since then!). I mean, it’s just too yummy to change. I made the batter, and poured into a mini muffin pan that I had sprayed with non stick cooking spray. I added a couple of extra chocolate chips right on top, but that’s really just to look pretty. It is definitely an optional step. Bake at 350* for 15 minutes or until golden brown and serve with warm syrup for dipping. We were able to get 30 pancake bites from one batch of pancake batter.
We were all blown away by these amazing little bites. They had the great pancake taste and the perfect muffin texture, with the ease and portability that makes muffins so awesome. My kiddos ate these on the go while we were on our way to hockey (without the syrup…and they are still just as good!) and then requested them again for breakfast the next day.
And I obliged, because I wanted a couple as well.
This is a great breakfast or a fun snack that any kid, from 1 to 100 will enjoy!
