It’s that time of year again, people…the time when I whip out the beer to create yummy recipes and pretend that it is all for St. Patrick’s Day. Yeah, it’s not. What can I say, I love the flavor that beer adds to all kinds of dishes!
And since beer and chocolate should be paired together at all opportunities (PS: my kids thought I was crazy when I hummed the Wedding March song while making these truffles), here is yet another fun recipe that marries the two flavors perfectly. You see what I did there? Hehe.
Guinness Chocolate Truffles!!!
This is a simple recipe that I adapted straight from the Guinness Storefront. I added an extra dose of chocolate to mine, just because that’s how I roll.
- 2 cups dark chocolate, chopped into small pieces
- ⅔ cup heavy cream
- ¼ cup Guinness beer
- zest of one orange
- 8-10 ounces semi sweet chocolate
- Using a double boiler, melt the dark chocolate, heavy cream and beer together until smooth, creamy and the chocolate has completely melted. Let cool to room temp and then refrigerate for 2 hours.
- Now that the mixture has firmed, scoop 1-2 tbs balls and roll in your hands to create a nice shape. Set on a parchment paper covered baking sheet. Repeat until you've used all of the mixture. Return to refrigerator and allow to cool for another 30 minutes.
- Melt semi sweet chocolate in double boiler and dip each truffle into it to coat fully. I like to use a fork to do this. Return to baking sheet and once again chill for 30 minutes.
You do have to devote a bit of time for these truffles, but the vast majority of it is just sitting around waiting for them while they are chilling. If you are impatient like me, just be prepared to lick lots and lots of chocolate from your hands when you are done trying to form your misshapen balls.
I added a bit of sprinkles to mine to make them extra fancy. 🙂
