Protein Packed Popsicles

I called my mom yesterday to wish her a happy Mother’s Day and she mentioned that it was snowing.  Was I a little bit jealous?  Yeah, I was…I’m weird like that.  That and I am already dreading the scorcher of a summer that we are going to have here as it is supposed to be 90 degrees today.  Ugh.

But the good news is that it’s the perfect weather for popsicles!  I adore popsicles, especially when I create my own and I can control the ingredients.  Sometimes I sneak fruits and veggies into my kids, or more recently I have been obsessed with these protein packed popsicles that I have been enjoying myself!

When I was at Target recently, I stumbled upon this yummy new Fruit Smoothie whey protein powder from EAS.  It was kind of hidden back by the pharmacy, but I was super excited to give it a try as soon as I saw it.  I already loved EAS protein because it is such a simple and effective way for any active person to meet their protein needs, and I am terrible about making sure I am getting all of the necessary protein.  I need all the help I can get!  🙂

These popsicles are only two ingredients, but you can jazz them up by adding fresh fruit, layers of yogurt or anything else that you can think of.

Protein Packed Popsicles

Serves: 6 popsicles
Ingredients
  • 15 oz can coconut milk
  • 2 scoops EAS Fruit Smoothie Protein Powder
  • sliced fruit (optional)
Instructions
  1. If you are using fresh fruit, slice it thinly and carefully push down on the sides of the popsicle mold.
  2. Mix together coconut milk and protein powder until smooth (there may still be some small clumps, that is okay).
  3. Pour coconut milk mixture slowly into the popsicle mold.
  4. Freeze for several hours, until completely frozen. Remove from mold and enjoy!
