Kabobs are one of my favorite things to grill in the summer months. I love using lots of bright, colorful veggies to add not only fantastic flavors, but also to look gorgeous when plated. But there is one major problem with kabob cooking…nothing is the same size or shape and each ingredient requires different cooking times. Nothing comes out right when it’s all together. It’s enough to drive a girl to tears when you see overcooked and mushy veggies right next to nearly raw chicken. There is really only one solution to perfect kabobs, and although it makes perfect sense, it always seems to blow minds and make people question everything they know. Wanna know the secret?
Cook each ingredient separately, on its own skewer.
I know, shocker. It turns your whole kabob world upside down, doesn’t it? It goes against everything that you were taught, but it is simple and produces perfectly cooked ingredients every time. Since mushrooms seem to take forever to cook, throw those on the grill first (tip: use two skewers to keep them from falling off). Next, add your onions and meat skewers. Then comes peppers and squash and finally the pineapple and tomatoes.
Now I know what you are thinking…that your presentation won’t be as striking without all of the colors on one kabob. But they are still beautiful (and well cooked!) when all laid out together. If you’ve got company, put each ingredient on it’s own platter and have colorful plates full of yummy food. And now you won’t have to argue with your kiddos to eat that squash or onion if they aren’t interested. They can choose the ingredients that suit them and not waste the rest of what would be on the kabob.
