Perfect Game Day Food – Buffalo Chicken Rolls

My name is Kristen and I am addicted to buffalo wing sauce.

I could eat pretty much anything as long as I had some buffalo wing sauce to dip it in.  I am obsessed with it.  Doesn’t matter if it is pizza, cauliflower or cheese sticks, I am dunking it in wing sauce.  Scrambled eggs, turkey sandwich or french fries?  Yep, it too will be devoured with wing sauce.  I just love it.  So when the hubs and I were talking about what kind of food we wanted while we watch the big game, obviously buffalo chicken was the first thing that popped into my mind.

But we wanted hand held, customizable food.

After a few back and forth ideas, we dug through the fridge for some extra brainstorming power and stumbled upon a package of egg roll wrappers.  The big light above our heads went off and we excitedly starting chatting about how to make Buffalo Chicken Rolls a thing.

Trust me, they are a thing.  And you want to have them in your life.

My hubby is more of a BBQ sauce kind of guy, so we kind of each went our own way from here.  I won’t tell you that one is better than the other (but if I did I would totally tell you that buffalo is always a winner!), but they are easy enough to make that you could try them both (and a myriad of other varieties) and report back what your winner was.

Buffalo Chicken Rolls

Ingredients
  • 1 lb cooked and shredded chicken
  • ¾ cup buffalo wing sauce
  • ¼ ranch dressing
  • blue cheese crumbles
  • egg roll wrappers
Instructions
  1. Preheat oven to 400*
  2. In a large bowl, combine the chicken with the wing sauce, ranch dressing and blue cheese crumbles. Stir to ensure an even coating.
  3. Lay out an egg roll wrapper in front of you. Add about ½ cup of filling to the middle and fold the bottom of the wrapper up. Next fold each side of the wrapper in. Dipping your finger in water, lightly brush the top edges of the top side and fold it down as well. The water acts as a glue to hold the wrapper together.
  4. Place the filled egg rolls onto a baking sheet and bake for 10 minutes. Flip the egg rolls over and bake for an additional 10 minutes

 

Add your filling to the wrapper and fold up the bottom.

 

Then fold in each side.

Dip your finger in water and wet the top edges, then fold it down to meet the middle.

There you have it, an awesome hand held, fully customizable treat that is perfect game day food (or anytime…trust me, we have been enjoying them often!).

PS: if you are having a hard time finding egg roll wrappers, they are often kept in the “wet” section with the produce.
