This week has been one of those that makes me feel like I need comfort food to make it through. You know that feeling, right? Every now and then I just have an insatiable craving for something so delicious and horrifyingly bad for you that I can’t deny it. And when that happens, I turn to my old favorites like macaroni and cheese, waffles with a huge dollop of butter and dripping with syrup and cinnamon rolls. I adore cinnamon rolls. The ooey gooey sugar filled sweetness just does me in. Sadly, we all know what the nutritional value for yumminess like this look like, so it is a rare treat in my home. And truth be told, I generally don’t have the time to make home made rolls and end up making the variety that comes in a tube. The craving this week was telling me that I needed to carve out the time and make some from scratch, so that it exactly what I did.
For the cinnamon rolls, I used this recipe from Food Network, but I was not happy with the icing recipe, so I came up with my own. To be honest, the way that I chose which cinnamon roll recipe to use was by blindly picking the one with the highest rated reviews. Instead of repeating all of the directions here, I will send you directly to the site for detailed instructions. I will give a quick tip though; if you don’t have a dough cutter, try raiding your bathroom drawer. Dental floss is a fantastic option to help you slice the dough evenly and without smashing it down.
Please excuse the blurry picture, my eight year old took it with my phone.
Simply crisscross the floss and pull both ends until it cuts through the dough. It is best to use unflavored floss, but in a pinch, you’d be fine with mint. I’ve ended up using flavored floss before and you can’t taste the mint.
Now for my favorite part of a cinnamon roll…the icing!
- 4 ounces cream cheese, at room temp
- 4 Tbsp butter (half of one stick), at room temp
- 1½ cup powdered sugar
- ½ tsp vanilla extract
- 1½ Tbsp milk (optional)
- Whip cream cheese and butter until creamy. Add powdered sugar and vanilla and mix well. Add milk as needed to reach the consistency that you prefer.
And just like that, my week is suddenly looking up! How can you feel down when you are devouring cinnamon rolls?
