Oh muffin tops. Sometimes we love you (ie: when you are actually on the top of a muffin) and sometimes we do everything we can to try to get rid of you (you know who you are, pesky chub peeking over the top of my jeans!). This is a whole new kind of muffin top, and let me tell you: you will love it! This delicious treat is the love child of a chocolate chip cookie and everyone’s favorite part of a muffin…the top. Put the two together and you walk away with a pretty dynamite snack.
Getting the raised puffy top took some effort, but three and a half attempts at creating my recipe later I have a cookie jar filled with perfection! Are you ready to try some for yourself?
- 1 egg
- ½ cup milk
- ⅓ cup vegetable oil
- 1¾ cup flour
- ½ cup sugar
- ¼ cup brown sugar
- 2 tsp baking powder
- ¼ tsp salt
- 1½ cup chocolate chips
- Preheat oven to 400*
- In medium bowl, whisk together egg, milk and oil. Stir in flour, both sugars, baking powder and salt until just moistened. Stir in chocolate chips.
- Place dough by rounded tablespoonfuls onto ungreased cookie sheet.
- Bake 7-9 minutes or until edges are lightly browned. Remove to wire rack to cool.
Now I’ll just have to add another workout or two this week so that my dreaded muffin top doesn’t grow too much due to my new favorite muffin top cookies!
