Bacon is a big thing in our house. My husband and kids are pretty crazy about it and would think that most foods would be amazing if only they were covered with bacon. We’ve even made chocolate bacon popcorn, but this was a new one even for us. We wrapped pork with bacon. Yep, you heard me right…pork on pork action. And the results were phenomenal! If you are a bacon fan, make sure to try this recipe!
- 1 lb boneless pork chops
- 1 slice of bacon per pork chop
- 1 mango, chopped
- ½ cup diced red pepper
- 1 Tbs fresh cilantro, chopped
- 2 Tbs fresh lime juice
- Fold bacon in half lengthwise and wrap around pork chop, securing with a toothpick. Preheat a large skillet sprayed with cooking spray on medium high heat. Add pork chops and cook for 5 minutes on each side or until thermometer inserted shows 145*F.
- Meanwhile, combine remaining ingredients.
- When done, remove toothpicks from pork chops. Top with mango salsa before serving.
This is a quick and easy meal that would be perfect for a weeknight, taking 25 minutes from start to finish.

Did you season the pork chop at all or just let the mango salsa do the seasoning?
Candice, I did not season the pork chops as they cook in the bacon grease. They end up with quite a bit of flavor from that and the salsa adds to it.
