So maybe I have a bit of a problem.  Admitting it is the first step, right?  No, my problem is not a drinking problem, it is a cooking with beer issue that I have.  I like to do it…and often.  I hope you enjoyed the Guinness Brownies that I posted on Wednesday and also the quick and easy beer bread from a couple of months ago, so here is a new one to add to the beer infused food repertoire.  Years ago a friend gave this recipe to me knowing that my husband would love it.  At the time my hubby and I were young, broke college kids who subsisted mostly on Hamburger Helper and jarred spaghetti sauce pasta.  Not high living by any circumstances, but every now and then I would use my budding cooking skills to whip up something “super fancy.”  This Guinness beef stew was one such recipe.  Not only did it require buying a couple of pounds of round steak, but it also calls for beer that is a bit higher shelf than Budweiser.  Way out of the norm at the time!  Of course now that we are older and our tastes have “refined” a bit (don’t get me wrong…Hamburger Helper is literally my five year old son’s favorite meal…no joke!) we tend to have great craft beers stocked in the fridge at all times and I just wish that round steak was the most expensive meat that I was buying.  No matter how much time has passed or how my cooking has evolved and changed, this is a recipe that we still go back to and enjoy at least a couple of times a year.  We try to space it out so that we never tire of it and it will hopefully always be a great memory of where we started and how far we have come.

Beer Makes Everything Better - Guinness Beef Stew

A hearty stew that incorporates Guinness Stout to create a rich flavor.

Serves: 2
Ingredients
  • 2 lbs round steak, cut into small, bite size chunks
  • 2 Tbs olive oil
  • 1½ onion, chopped
  • 2 cloves of garlic, minced
  • ¼ cup flour
  • 1 cup beef stock
  • 1 cup Guinness beer
  • 3 carrots, chopped
  • 1 tsp thyme
  • green onions (optional for garnish)
Instructions
  1. Fry onions in olive oil until golden brown, then add garlic and cook for one minute.
  2. Remove onion and garlic from pan and set aside. Add meat to pan and fry until brown.
  3. Reduce heat and add flour, being sure to coat meat with flour. Add stock slowly.
  4. Add Guinness and bring to a simmer.
  5. Add all ingredients and simmer on low for 1-2 hours.

I just serve this stew with a salad and come crusty bread to soak up the juices and it makes for a filling and hearty meal.
