Blackberry Lemon Protein Muffins

We are now closing in on the end of January.  Are you still working hard and following your New Year’s Resolutions?  I’ve got to tell you, I got off to a rough start.  Like the kind of start that makes you start to think, “why bother?”  Thankfully I’ve got a big milestone birthday coming up in 3 months and I am determined to be at my best when I hit a new decade of life.  I have started training to run my first half marathon three days before my birthday and I am feeling the pressure.  The treadmill has become a very good friend of mine.  Of course when you are working hard, you need to make sure that you are eating well before and after the workout at the very least.  Being the busy mom of three, military wife and blogger that I am, I am seriously lacking time to sit down and replenish nutrients.  I need food that I can grab and take on the go.  That’s where these awesome muffins come in.  They are filled with healthy ingredients and I even snuck in a full scoop of protein powder in each half dozen.  That’s what I am talking about!

And did I mention that they are delicious?  And gorgeous?  Yep, all of the above!

Blackberry Lemon Protein Muffins

An absolutely delicious and healthy protein filled muffin.

Ingredients
  • 1¼ cups old fashioned oats
  • ½ cup vanilla Greek yogurt
  • ¼ cup baking Stevia
  • ¾ tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp lemon juice
  • 1 scoop vanilla protein powder
  • 1 cup diced blackberries
Instructions
  1. *Note: When you bake something that does not have a flour base, paper liners tend to stick terribly. Just make sure to liberally spray your muffin pan with non stick spray and allow the muffins to cool slightly before running a butter knife around the edges to release it.
  2. Preheat oven to *375
  3. Combine all ingredients except for the blackberries in a food processor and pulse until the oats have become smooth. Use a spoon to fold in the blackberries and divide batter among muffin tin.
  4. Bake for 25 minutes or until toothpick comes out clean.

These don’t look like health food to me!
