Blueberry Cinnamon Melts

Why is it that no matter how early I wake up mornings in a house full of kids are so hectic that I feel like I have lost three quarters of my mind by the time I get everyone to school?  Do you know what I am talking about?  I plan out breakfasts and lunches, prepare clothing the night before and still end up pulling my hair out before the school bell rings.  It is so challenging to make sure that the kids are starting their day off on the right foot with healthy and delicious food.  And for that reason, I am obsessed with these blueberry cinnamon melts!

These blueberry cinnamon melts are perfect for a quick breakfast or snack and are a much healthier alternative than so many options out there (we pair ours with yogurt for dipping and it eat with a fork).  The addition of the blueberries paired with foods that we already love is basically a match made in Heaven.

Whenever I buy blueberries I notice little hands pilfering the entire carton before I’ve even had a chance to add them to my yogurt…we all love them!  And I am okay with that since so much goodness is packed in to these little beauties.  They are chock full of antioxidants, vitamin C and they help boost brain health.  Not to mention that they are super low in calories and practically fat free!

Blueberry Cinnamon Melts
 
A yummy blueberry treat that you can enjoy any time of day!

Ingredients
  • 2 whole grain tortillas
  • cinnamon cream cheese
  • ¾ cup fresh or frozen blueberries
  • vanilla yogurt (optional)
Instructions
  1. Spray pan or griddle with non stick cooking spray, turn to medium high heat. Spread cream cheese one side of each tortilla. Set non cheesed side of tortilla onto griddle and place blueberries on top. Place second tortilla, cream cheese side down on top of blueberries. Cook until bottom is golden brown, flip and again cook until bottom is golden brown. Cut in to eight slices.
  2. Serve with yogurt for dipping.

Like me, I know many of you are working hard to eat healthier in the New Year and I encourage you to incorporate blueberries into your life.  Even small changes can add up to make a big difference.  Add blueberries to your salad, yogurt or oatmeal for a yummy boost in flavor and texture or take a baggie to work to snack on at your desk when you feel that 3 o’clock slump coming on.  My family also really loves putting them into our buttermilk pancake batter, our 3 ingredient crepes and our green smoothies.  They are so good you just can’t resist them, and since they are grown both domestically and internationally they are always available in the grocery store year round.  PS: they are great frozen as well!
