Cinnamon Chip Snickerdoodles

My husband and I are from Montana and basically worship snow.  Being a military family we are currently stationed in the south where the slightest possibility of a single flake falling from the sky brings the whole town to a standstill.  We are slowly but surely adjusting to these ways as our last three duty stations were New Mexico, Georgia and now North Carolina, but we still find it absolutely bizarre when school is cancelled.  Two weeks ago gave us our first real snow fall of the year and the kids got 3 and 1/2 days off.  Of course now we are experiencing all that winter storm Pax has to offer and the kids are out another 3 1/2 days of school.  That has given us quite a bit of time to work on projects and crafts with them in an effort to keep them from bouncing off the walls and complaining non stop of their boredom.  I’ll be posting a couple more of our activities, but decided that today’s choice was far too good to save.  As cabin fever began to really sink in, cookies came to save the day.  And not your ordinary cookie; oh no.  These cookies will give even the most energy bound elementary school children reason to pep up!  They are that good.

I happen to be a big fan of a snickerdoodle recipe that I found years ago on Food Network, and I generally make very few changes to it.  This time, I omitted the cinnamon to roll the cookies in and added a bag of cinnamon chips instead.  The flavor difference is surprisingly intense and a nice change up.

Soft and chewy snickerdoodles made with cinnamon chips

Serves: 3 dozen
Ingredients
  • 2¾ cups all purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup shortening
  • 8 Tbsp butter, at room temp
  • 1½ cups sugar, plus 3 Tbsp
  • 2 eggs
  • 1 (10 oz) bag of cinnamon chips
Instructions
  1. Preheat oven to 350*
  2. Sift flour, baking soda and salt into small bowl.
  3. Using a mixer, beat together butter and shortening. Add 1½ cups sugar and beat until light and fluffy (3-5 minutes). Add eggs, one at a time and beat well after each addition. Add flour mixture and beat until smooth. Fold in cinnamon chips.
  4. Put 3 Tbsp sugar in a small bowl. Roll dough by hand into 1 inch balls and then roll in sugar. Flatten the balls onto an unlined cookie sheet to make disc like shapes.
  5. Bake until light brown but still moist in the center, about 10-12 minutes.

I hope that wherever you are, you are enjoying a safe and happy winter season.  While I have certainly enjoyed having some extra time with my kiddos, I know that they are very much looking forward to going back to school and being able to play with friends.  I guess that means that I’ll be stuck here alone to eat all of the cookies…it could be worse!  🙂
