My kiddos and I have been loving the opportunity to spend some quality time together in the kitchen lately, and this week was no exception. Getting in the mood to celebrate Easter, we decided to whip up some Easter egg basket cupcakes. So easy, with a big impact! With the help of Pillsbury™ you can make your own in no time!
Supplies:
Your favorite Pillsbury™ cake mix (along with eggs, water and oil)
Pillsbury™ frosting (I was so excited to find this Key Lime flavor so I wouldn’t need to worry about adding coloring)
decorating tip #233 and piping bag
candy eggs
pipe cleaners
cardstock
optional: decorative scissors, ribbon, hot glue
You might remember the last batch of cupcakes that we made to make our guests feel welcome. Because I love to bake I had picked up multiple boxes of the mix the last time I was at Walmart (I mean, I was already in that aisle, so why not, right?!) and was ready to roll when it came time to make these. With the help of my three favorite sous chefs, the cupcakes were baked and cooling before I knew it.
While we waited for the cupcakes to cool, we assembled the baskets. Using one of the crazy amount of free templates available on Pinterest, we cut cardstock into shape and then used the decorative scissors to create a fun top edge.
Using hot glue, we attached the pipe cleaners (which we had wrapped with ribbon) to the paper after gluing the basket together and set aside. Tip: if you wanted to skip a step, you could poke the pipe cleaner directly into the sides of the cupcake itself after it has been frosted and just tape the sides of the basket together.
Once completely cool, we grabbed our piping bag, decorating tip #233 and the icing. Filling the bag about half full, hold the tip above the cupcake at a 90* angle and squeeze the bag gently. When the grass is long enough for your taste, stop squeezing and then lift the bag straight up. This is a pretty easy technique, but if you’ve never done it before I would suggest using a practice cupcake to get the hang of it. It also uses more frosting than just adding a layer with a butter knife does, so if you plan to frost all 24 cupcakes, you’ll probably need three containers of frosting.
Candy eggs are pretty easy to find at the store around Easter, and my kids were smitten with these when they saw them. We simply set a few on top of each cupcake.
And voila! Easter egg basket cupcakes that were a snap to whip up but will make everyone who sees them happy. It is always so much fun to decorate cupcakes…much like decorating the Easter eggs themselves, if you ask my kids, and I loved every minute we spent together.
