A decadent treat that combines the wonderful flavor of beer and chocolate.

Ingredients
2 cups dark chocolate, chopped into small pieces
⅔ cup heavy cream
¼ cup Guinness beer
zest of one orange
8-10 ounces semi sweet chocolate
Instructions
Using a double boiler, melt the dark chocolate, heavy cream and beer together until smooth, creamy and the chocolate has completely melted. Let cool to room temp and then refrigerate for 2 hours.
Now that the mixture has firmed, scoop 1-2 tbs balls and roll in your hands to create a nice shape. Set on a parchment paper covered baking sheet. Repeat until you've used all of the mixture. Return to refrigerator and allow to cool for another 30 minutes.
Melt semi sweet chocolate in double boiler and dip each truffle into it to coat fully. I like to use a fork to do this. Return to baking sheet and once again chill for 30 minutes.
