I know that I’ve mentioned it a time or two before, but I love time outside with my family and friends and summer is basically made for doing just that. While I’m gearing up for a super busy summer full of travel, I’m soaking up as much patio time as I can and enjoying grilling and just plain hanging out. And let’s be honest, what’s a better laid back way to relax than a little taco and margarita fiesta?
This fresh corn salsa will get your meal off to a delicious start! It’s easy to make and tastes way better than anything you can buy in a jar.
I grabbed some Sunshine Sweet Corn from Florida at my local grocery store and let my little helpers get to work husking. They have tons of fun with it an turn it into a competition (notice I send them outside…they make a mess!).
- 4-6 ears of Sunshine Sweet Corn
- ½ cup chopped cilantro
- ½ cup chopped red onion
- 2 jalapeños, medium sized, chopped
- 2 Tbs lime juice
- ½ tsp pepper
- ¼ tsp salt
- Husk corn, then add to boiling water for 3-5 minutes. Remove from water and slice fresh corn off the cob.
- Combine all ingredients in a large bowl and mix well to combine.
