My name is Kristen and I dislike vegetables. There are a few exceptions to this rule, but for the most part, eating my veggies makes me feel like a child again. Do you remember those days of being forced to eat something that you just couldn’t stand the taste of and feeling as though you were about to gag? Yeah, sometimes I still feel that way and it is almost always due to eating my vegetables. I like to be able to set an example for my children and fill my plate with all of the colorful veggies that I prepare at dinner, but I really have to force myself to get through it. Luckily for me though, I have discovered the glorious green smoothie. The first time that I heard about a smoothie full of spinach I was completely disgusted. And spinach is one of the few greens that I enjoy! The thought of grinding up and drinking what should normally be in my salad just seemed so foreign and strange to me that I almost didn’t try it at all. I am so glad that I did though, because I can tell you now that it is delicious. Not only do you not really taste the spinach, but I am able to drink an entire days worth of my recommended fruits and vegetables for breakfast! Say what?! That’s right, I drink all of my veggies first thing in the morning. And as an added bonus, this is a really filling smoothie and I find that it keeps me full until lunch. Here is my favorite recipe that I have come up with:
- 2 cups spinach leaves
- 1 cup frozen mixed fruit
- ½ cup Greek yogurt
- ½ cup almond milk or juice
- 2 Clementines or an orange
- 1 banana
- Layer all ingredients in your blender and blend until smooth.
Just look at all of the goodness packed in there! The Greek yogurt has lots of protein in it and will help to keep you feeling full longer. This is such a great way to have a healthy breakfast that is quick and can even be on the go. I can’t tell you how many times I have ended up with one of these smoothies for lunch in the car on the way to pick up my kiddos from school.
Are you starting out the New Year with a healthy eating or weight loss resolution? If so, you really need to try this. Trust me that the fruits and yogurt have far more flavor than the spinach and you really, truly don’t taste it. My four year old comes running when she hears the blender because she loves these smoothies just as much as I do. And come to think of it, she shares my dislike of vegetables!

This is great! Do you need a special kind of blender to make this, like a juicer? I’ve been buying the Green Goddess Juice to have each morning but would love to make my own in my blender!

Hi Melissa, there is no need for a special blender for this smoothie. As long as your blender can handle ice, it should have no problem with the frozen fruit. I hope you enjoy it!
