The 4th of July is hands down my favorite holiday and this year is extra special since my hubby will just be returning from yet another deployment. The two of us will have a couple of days together before heading out to Colorado to pick up the kids from their summer vacation. We’ve got it planned out to arrive on the 4th and be able to enjoy the holiday with them and I can’t wait to make and share these healthy patriotic popsicles with them as well!
Using red, white and blue as the theme I chose to use raspberries and blueberries with coconut water.
You could absolutely use Sprite or Gartorade…basically anything that you like that will freeze clear or white. If you’ve never had coconut water before, it has tons of health benefits but can be an acquired taste. If you were to make these for a get together I might have a few options available as a back up for picky eaters. Just be sure to buy a product that is pure coconut water. There shouldn’t be any added ingredients, especially sugar!
I used my Zoku pop maker and was able to make and enjoy these popsicles in less than 15 minutes, but you can use any popsicle mold. You can often find them at the dollar store or for a couple of bucks at your local grocery store.
Start by adding some fruit to your mold. The heavier the item, the more it will sink to the bottom, so place your fruit accordingly. For me, I knew that the blueberries would be the sinkers so I chose to put them on the bottom of the mold to start with. That way they look great when the pop comes out and they are right on top!
- Fresh or frozen fruit (raspberries, blueberries, strawberries, blackberries)
- Pure coconut water
- Using a popsicle mold, put some fruit into the container and fill to the top with pure coconut water. Freeze until solid and enjoy!
Then fill to the top with the coconut water and allow to freeze. Once solidly frozen, all you have to do is kick back and enjoy!
