“Well that escalated quickly.”
That was what my daughter had to say of our spring weather. We went from 40 degrees and pouring rain to the high 80s within a couple of days. And the heat looks like it is here to stay, so it is most certainly time to start whipping up some cool treats to enjoy in the hot sunshine. This frozen yogurt bark is a perfect example of how to use healthier snacks to trick yourself and your kiddos into thinking that you are getting a calorie and fat laden popsicle. It’s full of protein, super easy to make and way yummier than any old fudgesicle.
- 3 cups vanilla greek yogurt
- 2 Tbsp honey
- 1½ Tbsp vanilla extract
- 1-2 cups or your favorite fresh fruit (I used raspberries)
- Cover the bottom and sides of a 9 x 13 baking dish with aluminum foil and set aside.
- In a large bowl, combine the yogurt, honey and vanilla and mix well.
- Carefully fold in the fresh fruit, trying not to mash the fruit.
- Cover and freeze for four hours.
- Lift the piece of aluminum foil from the dish and cut or use your hands to break the bark into pieces.
- Store in an airtight container in the freezer.
I absolutely love greek yogurt for the punch of protein that it packs, and also because it freezes beautifully and can be made into all kinds of frozen desserts and treats. This recipe can be changed up and mixed around using whatever fresh fruit you have on hand. Honey and vanilla pair well with pretty much everything!
Now my kids can reach for a healthy, yummy treat to enjoy during our hot southern spring and summer and I don’t have to feel an ounce of guilt for letting them enjoy it. In fact, I’ll probably be joining them on most days!
