Lemon Glazed Blueberry Oatmeal Cookies

I am a sucker for blueberries and I love to add them to any and all recipes that I can.  When the kids asked for oatmeal cookies last week, we decided to throw caution to the wind and use blueberries instead of chocolate chips or raisins.  The blueberries kept the cookies moist and absolutely delicious.  To take it over the top, we made a quick lemon glaze to add to the cookies after they had cooled.  So good!

Lemon Glazed Blueberry Oatmeal Cookies

A delicious oatmeal cookie chock full of blueberries with a tangy lemon glaze.

Ingredients
  • 1½ cups whole wheat flour
  • ½ tsp salt
  • ½ tsp baking powder
  • 1½ cups brown sugar
  • ½ cup granulated sugar
  • 1 cup butter, softened
  • 2 eggs
  • 2 tsp vanilla
  • 1 cup fresh blueberries
  • 3 cups rolled oats
  • 1 cup powdered sugar
  • 1 Tbs lemon juice
Instructions
  1. Preheat oven to 350*
  2. Sift together flour, salt and baking powder in small bowl; set aside.
  3. Cream the sugars and butter together on medium speed until light and fluffy. Beat in eggs, one at a time. Add vanilla and mix well, then add flour mixture and beat until just combined.
  4. Using a wooden spoon, stir in blueberries and rolled oats.
  5. Roll 1-2 Tbs of dough per cookie and place on baking sheet.
  6. Bake 12-14 minutes or until just golden brown.
  7. Allow the cookies to cool on wire rack.
  8. Mix together the powdered sugar and lemon juice, adding more lemon juice if you prefer the glaze to be thinner. Drizzle over cookies and allow to harden.
  9. Serve in an airtight container.

These cookies not only taste delicious, but they look beautiful as well!  And you can almost trick yourself into thinking that they are a healthier option since they use rolled oats and blueberries.  At least that’s what I try to tell myself when I eat more than my fair share!
