No Machine Needed Mint Oreo Ice Cream

Some days just require dessert, plain and simple.  Whether it was a rough day at work, the kids did something to celebrate or just a sweet tooth craving, we’ve all been there.  And desserts that come together quickly, easily and inexpensively somehow seem to make it all taste better.  Funny how that happens, isn’t it?

Good news!  I’ve got an incredible dessert that will fit into all of those requirements and I can’t wait to share the recipe with you!  So who is ready for some mint Oreo ice cream with no ice cream machine needed?

Umm, yes please!  This girl!  And is it too early to ask for seconds?

So here’s the thing…I actually own an ice cream maker.  Not one of the rock salt and crank kinds, but the attachment for my KitchenAid mixer.  And I love it, I really do.  But every now and then I want to try something that will be a little quicker to throw together, and maybe less noisy too.  That attachment is SO loud!

This ice cream took less than 10 minutes to whip up, but did require some time in the freezer before we chowed down.  It was totally worth the wait.  SO creamy and rich, it was unbelievable!  I’m actually super excited to use just the base recipe and try out all kinds of flavor creations!

I mean really…just look at those beautiful chunks of mint Oreo.  YUM!

A no machine needed ice cream recipe that will blow your socks off!

Ingredients
  • 2 cups heavy whipping cream
  • 1 (14 oz) can sweetened condensed milk
  • ½ tsp peppermint extract
  • ½ tsp pure vanilla extract
  • 10-15 mint Oreo cookies, crushed
Instructions
  1. Use a food processor (or zippered bag and rolling pin) to crush Oreos. With mixer, whisk heavy whipping cream until soft peaks start to form. Meanwhile, combine sweetened condensed milk, peppermint and vanilla extract and crushed Oreos in a small bowl. Once the whipping cream is ready, gently fold the sweetened condensed milk mixture into the whipping cream. Pour into an airtight container and allow to freeze for at least four hours.
