Sometimes I really like to throw my kids for a loop. Just for my own entertainment, really…there’s no other purpose other than to keep them on their toes. Yep, I’m that mother. But I’m also the mother who makes popsicles that they can eat for breakfast, so I guess those loops aren’t all bad. And really, there’s no reason that you could not comfortably feed these gourmet – like popsicles to your kiddos for breakfast, because they are really just a pretty version of greek yogurt and fruit. That’s it! Totally guilt free, super exciting gourmet popsicles for breakfast. Sure, why not?
The trick to making them look so pretty with the gorgeous fruit showing? It’s so much easier than you might think. Simply add a small amount of yogurt (I used about a teaspoon at a time) to the bottom of your popsicle mold. Using the yogurt to help hold up the fruit, add thin slices to the side of the mold, pushing down to the bottom. Add more yogurt, more fruit and so on. Yeah, that’s really all there is to it. To make all four popsicles I used about two strawberries and half of a kiwi with 1 1/4 cups vanilla greek yogurt. Oh how I love the strawberry – kiwi combo!
And just in case you choose to make your gourmet popsicles for something as crazy as dessert, try adding some homemade magic shell for an added dose of deliciousness! Microwave 1/2 cup semi-sweet chocolate chips with 1 Tbsp coconut oil for about 30 seconds. Allow to cool to room temp then dip popsicles or use a spoon to spread it. Make sure to store the chocolate shell at room temp. It will harden in the fridge!
I just couldn’t help myself…I had to take a bite while photographing these beauties. So what do you think? Am I crazy to feed my kids a popsicle for breakfast every now and again? Or is it genius? I’d love to hear you thoughts!
