I’m forever on the hunt for quick and easy meals that I can take with me on the road. As horrible as it sounds, both my breakfast and lunch (and oftentimes dinner) are eaten in my car on my way to the next appointment. I always make time to feed my kids a healthy sit down meal before, say, lacrosse practice, but I often don’t get to join in as I am the one running all over the house looking for that second pink cleat or the all important sparkle headband.

Well, at least I’m not alone. And because I loved the quinoa granola that I recently made so much I decided to use some of those same ingredients and add it all together in a quick little bite sized ball of energy that I can grab and enjoy while on the go.
- 1 cup rolled oats
- ½ cup uncooked quinoa, rinsed and drained
- ½ cup peanut butter (or almond butter)
- ½ cup honey
- ¼ cup dried cranberries
- ¼ cup flax seed
- ¼ cup slivered almonds
- 2 Tbsp mini chocolate chips
- Add all ingredients to a blender or food processor and pulse until well blended. Chill in refrigerator for 1 hour.
- Roll 1-2 Tbsp of mixture into balls and set on a parchment paper covered baking sheet. Continue using the rest of the mixture.
- Chill for an additional hour, then store in an airtight container in the fridge.
I like to throw all of the ingredients right into my blender and mix it all up. That way I can just put the blender jar right into the fridge and keep my dishes to a minimum.
Now on mornings when I am running out the door with a growling stomach, I grab a couple of these balls and snack on my way to drop my little one off at preschool. They have been great for my pre-workout meal too!

Recipe sounds delicious, but it was no match for my food processor, blender or nutribullet. Mixture was just too think. Should I have tried adding water or some other liquid to thin it out a bit? I was afraid that would make it hard to shape into balls. The flavor itself is pretty good, but I’m not sure how I can mix it up better?
Hi Lynn, it is definitely a thick mixture in order to be able to be shaped into balls, but my blender was able to mix it all up. I did have to scrape the sides a couple of times and then blend again though…maybe that would help?
