Alright, truth time…this is the time of year that I start gaining weight. I know that I am not the only one, but every fall and winter becomes a struggle for me to eat all of the goodies that I want, but to try to maintain a healthy weight. I love baked goods and tend to make them often, so I have come up with ways to trick myself into thinking that I am getting an incredibly scrumptious treat, but to make it a bit less calorie and/or fat laden.
These apple pumpkin muffins are the most fantastic healthy treat that I have baked for myself since my paleo crepes. I love them! And I thought that you might too. It wouldn’t be very nice of me to brag about them and not share!
- 2 cups almond flour
- 1 cup pumpkin puree
- 4½ Tbsp honey
- 2 Tbsp cinnamon
- 2 tsp pumpkin pie spice
- 1 tsp nutmeg
- 1 tsp baking soda
- ½ tsp sea salt
- 6 eggs
- sliced apples (optional)
- Preheat oven to 350*
- Add all ingredients but apple in a food processor and pulse until smooth, about 2 minutes.
- Fill muffin cups approximately ⅔ full and place sliced apples on top of each muffin.
- Bake for 20 minutes.
I used the homemade pumpkin puree recipe that I shared with you the other day and it worked beautifully! I do hope that you’ll give it a try! But without a doubt, give these paleo apple pumpkin muffins a shot!
