Peanut Butter and Jelly Thumbprint Cookies

When the weather begins to cool, my favorite comfort foods always start to work their way back into the rotation.  Something about being chilly always leads me to crave the favorites of my childhood.

These incredible peanut butter and jelly cookies are the perfect amalgamation of grown up sophistication and childhood adoration of all things PB&J.  They are warm and gooey, astonishingly flavorful and most certainly considered comfort food!

I found some delicious fruit spread at Walmart the other day that was basically just begging to be added to a baked creation it was so tasty.  The next logical step is to add peanut butter, right?  I mean, peanut butter works with everything!

You more than likely have all of the ingredients in your pantry right now!

Peanut Butter and Jelly Thumbprint Cookies

Ingredients
  • 2 cups all purpose flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • 2 egg whites
  • 2 tsp vanilla
  • 2 Tbsp butter, melted
  • 2 Tbsp milk
  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1 cup Smucker's Fruit and Honey fruit spread
Instructions
  1. Preheat oven to 350*
  2. In a small bowl, combine flour, baking powder and salt. Set aside.
  3. In a large bowl, whisk together egg whites, vanilla, butter and milk. Add peanut butter and stir until all of the liquid is combined with the peanut butter. Stir in the brown sugar.
  4. Using a spoon at first and then mixing with your hands, add the flour mixture. It will be hard to incorporate all of it using just a spoon, so get in there and combine it all with your hands.
  5. Roll the dough into one inch balls and place on baking sheet. Use your thumb or index finger to indent the middle of each cookie. Fill each indentation with fruit spread.
  6. Bake 10-12 minutes. Allow the cookies to cool for two minutes on the baking sheet before removing.

Stir up the fruit spread before adding it to the cookies to remove any lumps, then spoon into the indentations.​

I can almost guarantee that the cookies will try to crack and break apart while you are making the indentation.  Just keep doing what you’re doing and then push the cracks back together before adding the fruit spread.
