Bikini season.

Yes, it sucks in so many ways when you are trying to shed off your winter weight and get ready for pool side attire, but I am one of those people who has a really hard time being super strict (with anything!).  I’ve got to have cheat meals or days, days taken off from working out and most definitely I need to be able to have a drink or two every now and then.

While these drinks still have some extra calories, they are like saints compared to the ones that you get at your favorite cantina.  If you are trying to eat cleaner and enjoy a drink, try these paleo margaritas and you’ll never feel cheated!

This is a pretty darn simple two step process and takes no time at all.  You can change up the flavor simply by switching out fruits, so try ’em all!

Perfect Paleo Margarita

Serves: 2-4
Ingredients
  • 2 cups ice
  • ¾ cup silver tequila
  • ½ lemon lime seltzer water
  • 3 Tbs honey (or agave)
  • 6 large strawberries, hulled
  • For glasses:
  • small amount of honey
  • ¾ cup unsweetened shredded coconut
Instructions
  1. Prepare glasses by running a very small amount of honey around the rim of each glass, then dip in shredded coconut.
  2. Combine all remaining ingredients in blender and pulse until you get the desired consistency.
  3. Pour into glasses and serve immediately.

To prepare the glasses, take a very small amount of honey on your index finger and run it along the outside rim of the glasses, then dip it into the shredded coconut.  Is it sugar or salt?  No.  But I will tell you that the mix of sweet honey and coconut with the drink is pretty darn incredible and I love it!

Seriously, aside from preparing the glasses, you basically just dump it all into the blender and walk away.  Doesn’t get much better than that! Just please be sure to enjoy responsibly!
