Summer in a Glass

Oh man, this is a busy week around here.  Between two super quick trips, lots of driving, three of us participating in a mud run and our back to school breakfast, all on top of our already hectic lives, I am going to need a drink or two to make it through.  And since my family has a HUGE surprise coming soon (we are putting in an inground pool, but shh…don’t tell my kids!), I am in the mood for all things tropical and poolside lounger worthy.  And this drink is just that.  When I was creating it and my son asked me what it was called, the first thing that came to mind was “summer in a glass.”  So that’s what we’ll go ahead and call it, but this cocktail may just make appearances all year round for me since it’s so tasty!

Although I am not a huge coconut lover, coconut rum is one of my favorite add ins for summer drinks.  Using that as my base, I tried different fruity concoctions and mixes until I came up with this…

Summer in a Glass

Ingredients
  • ½ cup lemonade
  • ½ cup lemon lime soda
  • 1¾ cup pineapple juice
  • 3 Tbsp coconut rum
  • coconut shavings for garnish (optional)
Instructions
  1. Mix all ingredients together and serve cold. Enjoy responsibly, for adults 21 and over.

So while I am sitting in the super hot, humid southern weather and just waiting and waiting for what feels like forever for our pool to be ready for a dip, I will enjoy this summer in a glass.  If I close my eyes and concentrate as hard as I can, maybe, just maybe, I’ll feel as though I am transported to a tropical island for a few sips.  😉
