When I think of chocolate truffles, I generally don’t think of it as being a super simple recipe involving only two ingredients. I think of it as a laborious, time consuming treat. Something that is usually easier to just purchase than make. But this recipe breaks all of those stereotypes! It is so easy and involves a whopping two ingredients (I’ll fess up and admit that I used three by drizzling with white chocolate, but that is totally optional). You can surprise your friends and family by telling them that you made these fancy pants truffles, you could give them as yummy diy gifts, or you could do my favorite and just eat them all yourself! Here is the recipe so that you can make your own:
- 20 ounces semi sweet baking chocolate, divided
- 8 ounces cream cheese
- Melt 8 oz chocolate. Blend cream cheese with mixer until creamy. Add in melted chocolate and blend well. Refrigerate until firm (about 30 minutes).
- Shape dough into 1 inch balls, should be approx. 36. Place on wax covered baking sheet.
- Melt remaining chocolate. Use fork to dip truffles in chocolate and then return to baking sheet. Refrigerate one hour.
- Store in a tightly covered container in refrigerator.
Here are my balls of dough just waiting to be dipped in melted chocolate.
Feel free to experiment with the base recipe and add whatever you can think of. I have been dying to try some crushed Andes mints or Oreos. I bet that these would be so festive and gorgeous with some crushed candy canes sprinkled on top before the chocolate hardens. Use your imagination, and I am sure that your taste buds will thank you!
