Watermelon Mojitos

While on a trip to Virginia Beach a few years ago, a friend took my hubby and I to a Cuban Mom and Pop, hole in the wall restaurant for dinner.  I enjoyed the dinner, but the mojitos are what completely sold me on the place and I have been craving them ever since!  I figured that it was time to recreate the magic in my own home and thought that summer would be the perfect time to add some fresh fruit to a homemade mojito. Watermelon was just calling my name.  And that is how this incredible watermelon mojito came to be.

If you read Wednesday’s post, you know that I have been suckered into taste testing lots and lots of different mixed drinks for an upcoming party.  Although this one was a bit too time consuming to make large batches ahead of time for the party, it was one of my absolute personal favorites.  The mint mixes amazingly well with the watermelon and the whole thing pretty much screams “summer.”  Switch it up and try it with coconut rum too!

Watermelon Mojitos

Ingredients
  • 10 mint leaves, torn into pieces by hand
  • 2 cups cubed watermelon
  • 2 Tbs simple syrup
  • 4 ounces rum
  • the juice of a lime
Instructions
  1. Mash the mint leaves with a mortar and pestle or the end of a rolling pin. Place the mint into the bottom of a glass.
  2. Put watermelon into a food processor or blender and puree.
  3. In a pitcher, combine the watermelon puree and the remaining ingredients and stir well. Pour into the glass with mint and enjoy!

A mortar and pestle is generally used to mash the mint leaves, but if you don’t have one, no worries.  I used the end of my rolling pin to crush my mint leaves.  Remember not to crush them to a pulp, just enough to release the flavor.  Also, if you would like to make your own simple syrup, just bring one cup of sugar and 1/2 cup water to a boil and stir until the sugar dissolves.  Allow to cool before using.

Add a few mint sprigs, a slice of watermelon or lime to the glass and you’ve got the makings of a fiesta in your hand!  Enjoy and drink responsibly.
